甜蔥雞丁起司辮子麵包 Chicken Plaited Bread with Onion & Cheese

材料 Ingredient
甜麵包麵糰 Sweet Bread Dough 1 份 portion
甜洋蔥 Glzed onion2 杯 cup
熟雞丁 Pan-fried chicken breast (diced) 2 杯 cup
披薩起司絲 Shredded cheese for pizza2 杯 cup
蛋 Egg 1 個 ea
牛奶 Milk 1 大匙 Tbs
白芝麻 Sesame seed2 大匙 Tbs

註:也可以使用 甜麵包麵團(中種法) 甜麵包麵團(湯種法)

Note: You also can use Sweet Bread Dough (Starter Method) or Sweet Bread Dough (Warm Dough Method)


做法:
1.壓出麵團空氣後把麵團等分成3份﹐每份揉成長條形。蓋上保潔膜醒20分鐘。
2.將條型麵團擀扁成40cm x 7cm長片型。
3.依序把洋蔥﹐雞丁和起司絲鋪在麵片上。
4.將麵皮從兩側拉起包住內餡﹐捏緊後搓成長棒型。
5.把三根麵棒的頭纏在一起﹐再編成辮子型。尾端塞進麵團底部。
6.烤箱加熱到100˚F(38˚C)。放入一盤滾水﹐再將辮子麵團放進烤箱發酵約40分鐘。
7.蛋与牛奶一起打散。取出麵團﹐塗上蛋汁﹐再撒上芝麻。同時將烤箱預熱到350˚F(175˚C)。將麵團放入烤箱中下層烤20分鐘即可。



PROCEDURE:
1.Punch the air out of the dough. Divide it into 3 equal pieces. Form each piece into a long tube shape. Cover the dough with a piece of plastic food wrap and let it rest for 20 minutes.
2.Roll each dough into a 14"x2.5" strip.
3.Sequentially place 1/3 of the glazed onion, 1/3 of the diced chicken and 1/3 of the cheese on each dough strip.
4.Lift two long sides of the dough strip toward to each other and pinch together to cover the fillings. Gently roll the dough into a log.
5.Pinch the ends of the three dough logs together. Cross the logs over each other to make a plait. Tuck in each end under the loaf.
6.Heat the oven to 100˚F(38˚C)。Turn off the heat. Place one cup of boil water and the dough in the oven to proof (approx. 40 minutes).
7.Beat the egg with the milk. Remove the dough and brush with the egg wash, then sprinkle with the sesame seeds. Meanwhile, preheat the oven to 350˚F(175˚C)。Bake the bread on the middle-lower rack for 20 minutes.
